Apple roses with Frangipane cream
Impress your guests with this beautiful rose-shaped dessert made with lots of soft and delicious apple slices, wrapped in sweet and crispy puff pastry.
There are many variatons of this recipe, here I made the one with frangipane cream filling. Preparing this dessert is easy, I cooked them for my birthday!
Ingredient for 12 roses:
2 puff pastry sheet
3/4 red apples
4 tablespoon of sugar
a pinch of cinnamon
For the filling:
125 gr. of unsalted butter at room temperature
125 gr. of caster sugar
1/2 tea spoon of almond extract
1/4 tea spoon of lemon extract
150 gr. of almond flour
1 egg
First of all, cut the apples in half, remove the core and cut them in paper thin slices then place the sliced apples in a sauce pan with two tablespoon of water and the cinnamon and cook them on the stove for 10 minutes. Let them cool completely.
For the Frangipane cream, mix the soft butter and the sugar with a hand mixer until it's pale and fluffy, add the egg and the extract and mix until it's well combined, add the almond and mix it. Let the cream set in the fridge for 10 minutes.
Unwrap the puff pastry and cut it in six strips, about 5cmx22cm, spread each stripe with a spoon of cream, place apple slices along the long edge, about 1/4 inch beyond edge of dough, overlapping slices slightly. Fold the bottom half of dough over the apple slices to form a long "folder" of dough with rounded edges of apple slices exposed.
Starting from one end, roll the dough not too tightly to form a rose-shaped pastry. Seal the roll with end of the dough strip.
Place each rose in a muffin tin and cook for about 30 minutes at 190°C.
Sprinkle with powder sugar and enjoy!
